Cole Mathers was raised in the Napa Valley and attended Yountville Elementary, frequently heading to The Spot, a beloved neighborhood restaurant in St. Helena, after his Little League games. Little did he know that life would come full circle as the site would later be transformed into PRESS Restaurant and he would eventually return as General Manager.
Mathers graduated with a degree in Computer Science & Mathematics from Sonoma State University. Following a move to San Francisco in search of his dream IT position, he worked at Restaurant Gary Danko. While the job was intended to help pay the bills, Mathers’ entire perception of what it meant to be a “restaurant professional” was turned on its head. He discovered a love of wine and focused his energies on learning everything he could, earning his certification from the Court of Master Sommeliers along the way. Mathers jumped on the opportunity to run the cheese program where he says, he was “bitten by the cheese bug.” He noticed that there were similarities between the great wines and the great cheeses of the world. His knowledge of cheese eventually eclipsed that of wine, and earned his credentials as an ACS CCP® from the American Cheese Society and passing the Certified Cheese Professional® Exam.
To his role as General Manager of PRESS restaurant, Mathers (40) brings not only a deep knowledge of the beauty of cheese and the intricacies of wine, but also a thoughtful and dedicated approach to service. He states, “It was PRESS’ history and Chef Phil Tessier’s vision, talent and work ethic that drew me to join the team. Our collective desire for improvement is what continues to inspire me every morning and to push ourselves to our limits of artistry and hospitality day after day and for years to come.”
